Chinese Pasta Salad

Ingredients :

  • 1 1/2 cups - Snow peas
  • 250 grams - Rice vermicelli & Red pepper sliced thin
  • 1/2 each - English cucumber sliced thin
  • 6 ounces - Cooked shrimp
  • 130 grams - Crabmeat
  • 1 tablespoon - Fine chopped fresh ginger
  • 1 each - Chopped garlic clove
  • 2 tablespoons - Sesame oil
  • 1/2 teaspoon - Black pepper
  • 1 1/2 teaspoons - Salt
  • 2 tablespoons - Lemon juice
  • 3 teaspoons - Vegetable oil
  • 1 teaspoon - Red wine vinegar

How to Prepare :

  1. Wash and trim snow peas. 
  2. Place them in a bowl and pour in enough boiling water to cover them. 
  3. Let stand 10 minutes; drain and set aside.
  4. Cook the noodles in plenty of boiling water for 3 to 4 minutes.
  5. Drain in colander, rinse with cold water and set aside. 
  6. In large bowl, combine noodles, snow peas, red pepper, cucumber, shrimp and crabmeat.
  7. In a small bowl, combine ginger, garlic, sesame oil, pepper, salt, vegetable oil, lemon juice and vinegar. 
  8. Pour this dressing over the other ingredients and mix thoroughly.
  9. Chill before serving.
