<li> 100 grams of pitted prunes</li>

<li> 2 tablespoons of olive oil</li>

<li> 2 teaspoons of cumin</li>
<li> 2 teaspoons of ground coriander</li>

<li> A pinch of cinnamon</li>
<li> One handful of fresh coriander, chopped</li>

<p><strong>Instructions:</strong></p>
<p><strong>Step 1:</strong> Get a pan and pour in olive oil. Heat it and then add the 400 grams of lamb leg steaks that are already cubed. Cook until it is golden brown.</p>
<p><strong>Step 2:</strong> Slice the onions and chop the garlic cloves and then add it to the frying pan. Continue frying for five minutes or so.</p>
<p><strong>Step 3</strong>: Add the ground coriander and cumin and follow it with ginger and the cinnamon. Continue frying for two minutes or so.</p>
<p><strong>Step 4:</strong> Add the chopped tomatoes, chopped prunes, lamb, and the chicken stock to the pan. Mix well and simmer for at least 40 minutes.</p>

<li> 300 milliliters of tub Joubere Lamb stock</li>
<li> 2 X 340 grams of diced leg lamb, packed</li>
<li> 2 tablespoons of chopped fresh parsley</li>
<li> 3 tablespoons of Waitrose Ground Almonds</li>
<li> 3 tablespoons of olive oil</li>
<li> 1 teaspoon of ground cumin</li>
<li> 1 teaspoon of ground cinnamon</li>
<li> 1 teaspoon of ground coriander</li>
<li> 2 teaspoons of Bart Spices Harissa</li>
<li> Salt to taste</li>
<li> 1 piece of large onion which is finely chopped</li>
<li> 2 pieces of garlic cloves which is thinly sliced</li>
<li> Pinch of saffron threads</li>
<li> 4 skinned and quartered tomatoes</li>
<li> 1 butternut squash which is diced</li>
<li> 4 large courgettes already cut into large pieces</li>
</ul>
<p><strong>Instructions:</strong></p>
<p><strong>Step 1:</strong> Get a large bowl and place the apricots in it. Cover it with boiling water and let it sit for 2 hours.</p>
<p><strong>Step 2:</strong> Preheat the oven to about 180 degrees Celsius. Put in the olive to a casserole that is flame proof and heat it. Individually brown the lambs and then add the remaining olive oil and onions to it and cook for about 10 minutes. Add garlic and other spices and continue cooking for about 2 minutes.</p>
<p><strong>Step 3:</strong> Add the soaked apricots and its liquid into the casserole.</p>
<p><strong>Step 4:</strong> Add the tomatoes and stock and stir in saffron for a bit. Then, add the salt and ground almonds and let it sit until it is simmering. Leave for 1 hour.</p>
<p><strong>Step 5:</strong> Add the remaining ingredients and cook it in the oven for an additional 45 minutes.</p>

<li>1    cinnamon stick,ground</li>
<li>1 t  black pepper,freshly ground</li>
<li>1 t  paprika</li>
<li>1    nutmeg,ground,whole</li>
<li>1 t  cumin</li>
<li>2 t  oregano,dried,pref. mexican</li>
<li>4 T  sesame seeds</li>
<li>1 c  almonds,blanched, skins-removed</li>
<li>12    red chiles,whole dried or 1 1/2 c  chile caribe</li>
<li>1 1/2 oz milk chocolate,small pieces</li>
<li>1 cn tomato paste(6 oz ea)</li>
<li>2 T  vinegar</li>
<li>3 t  lemon juice</li>
<li>1    soft tortilla,chopped</li>
<li>1    salt</li>

<p><strong>How to Prepare :</strong></p>
<ol>
<li>Place the rinsed beans in a bowl, add 2 to 3 cups of water and soak overnight.</li>
<li>Check the beans occasionally and add water as necessary to keep them moist.</li>
<li>Pour the beans and the water in which they were soaked into a heavy saucepan and add 2 to 3 more cups of water.</li>
<li>Bring to a boil over medium-high heat, then lower heat and simmer, partially covered, for about 45 minutes, until the beans are cooked but still firm.</li>
<li>Check occasionally and add water if necessary.</li>
<li>Drain the beans, reserving the cooking liquid.</li>
<li>Melt the lard in a heavy skillet over medium heat.</li>
<li>Add the beans and lightly fry them in the lard.  Set aside.</li>
<li>Melt the drippings in a large heavy pot over medium heat.</li>
<li>Add the onion and cook until it is translucent.</li>
<li>Combine the sausage and the beef with all the spices up through the oregano.</li>
<li>Add this meat-and-spice mixture to the pot with the onion.</li>
<li>Break up any lumps with a fork and cook, stirring occasionally, until the meat is very well browned.</li>
<li>Add the reserved bean-cooking liquid to the pot.</li>
<li>Stir in all the remaining ingredients.</li>
<li>Bring to a boil, then lower the heat and cook, uncovered, for 1/2 hour longer.</li>
<li>Stir occasionally. Add water only if necessary to maintain the consistency of a chunky soup.</li>

<p><strong>How to Prepare :</strong></p>

<li>In a large pot, soak the beans together overnight in water to cover.</li>
<li>Drain and add fresh water to cover.</li>
<li>Cook at a simmer for  1 1/2 hours or until beans are just tender.</li>
<li>While the beans are simmering, heat a large skillet.</li>
<li>Mince the bacon and cook it until it begins to crisp.</li>
<li>Add the onions and garlic and cook over medium heat for 5 minutes.</li>
<li>Add all the spices and the ground Poblanos and cook another 5 minutes.</li>
<li>Add the Tomatoes with their juice and the Beer.</li>
<li>Simmer for half an hour.</li>
<li>In another pan, cook the beef until the pink color disappears.</li>
<li>Drain and add it to tomato mixture.</li>
<li>When the beans are fully cooked, drain them, reserving the liquid, and add the beans to the meat/tomato mixture.</li>
<li>Salt to taste and let the mixture simmer for about 1 hour.</li>
<li>If it is too dry, add some of the bean liquid.</li>
</ol>

<p><strong>How to Prepare :</strong></p>
<ol>
<li>Drain beans.  Place in a large pot &amp; add 8 c water.  Bring to a boil.</li>
<li>Add peppers, ginger, bay leaf &amp; 1/2 c cilantro.  Cover &amp; simmer for 1 1/2 to 2 hours.</li>
<li>Remove from heat &amp; discard bay leaf.</li>
<li>Place cumin seeds in a pot &amp; toast.</li>
<li>When seeds darken, add chili powder, oregano, tomatoes.  Stir well &amp; bring mixture to a boil.</li>
<li>Reduce heat &amp; simmer for 30 minutes.</li>
<li>In another bowl, combine bulgur with boiling water, cover &amp; let sit for 10 minutes.</li>
<li>When beans are cooked, remove 1 c &amp; puree it with some cooking liquid.</li>
<li>Combine puree with remaining beans.</li>
<li> Stir in tomato mixture &amp; bulgur.</li>
<li>Season &amp; simer for 10 minutes.</li>
<li>Place mustard seeds in a pot over medium heat, cover &amp; cook till seeds start to pop.</li>
<li>Add fennel seeds &amp; cover.</li>
<li>Cook till popping stops &amp; fennel darkens.</li>
<li>Pour over chili.  Add remaining cilantro &amp; drizzle with olive oil.</li>
</ol>
<p><em>Yield: 8 Servings</em></p>
